I think, the payment amount is sort of pre-reserved and then withdrawn from the card at the time of the actual ride completion. If the funds on the customer’s account are insufficient, then Uber/Lyft won’t charge him and provide the service. Probably, in every country the mechanism is slightly different.
As of 2010, when Uber service started, they were partnering with Braintree. However, later on they surely must have found more processing partners as they expanded their operations. The best way to learn for sure is try to ask the company’s management in your target location. As for Lyft, I know that initially they used to have a partnership with Stripe. As of now, the situation might have changed.
