How, technically, does payment orchestration work among various PSPs? Is there a significant different in the offerings between players like ProcessOut (acquired by Checkout.com), Gr4vy, etc?

Everything depends on what you expect from your payment services/orchestration partnership (PayFac, PSP, acquirer, processor, gateway provider).
The differences are in the details (i.e. cloud-based hosted payment orchestration solution; in-house/on-premises solution; white-label or licensable solution; with or without open source code etc).
